Jim has always had a great passion for the outdoors and when he picked up a bow for the first time in 1981 he found a great challenge in the pursuit for whitetail deer and a perfect sport to share with his wife Gayla and two sons Shane and Adrian. Chef Jim Dean has 40 years in the culinary arts field. After graduating from the Culinary Institute of America in 1976 he worked in various high end restaurants before opening his own restaurant and catering business in 1979 named Bon Appetit. Then in 1985 J.Deans Smoked Meats was born from just a handful of deer hunters requesting him to make some smoked sausage. From 1985 to 2010 that handful has grown to thousands upon thousands of pounds of sausage and happy customers. Currently along with running his catering and smoked meat business he has worked along with his son Shane on a couple of projects, first is the Butcher Block Wild Game Cooking series DVD as the Chef and Host to bring new ideas to the hunters and sports mens kitchen tables. Second has been J.Deans Smoked Meats retail-wholsale market and of course bowhunting in Dose of Reality’s THE FINAL CHAPTER.
